1 sheet tinfoil
- 4 small corn tortillas
- 16 slices turkey pepperoni (28 grams)
- 1/2 cup tomato basil sauce
- 2 oz part-skim mozzarella cheese (56 grams)
Preheat oven to 400° Fahrenheit. Line a baking sheet with tinfoil and spray with non-stick cooking oil.
Place 4 small corn tortillas on the baking sheet, making sure they are not touching each other.
Take marinara sauce and evenly spread it out on each tortilla. Leave some room by the edge to form a crust.
Sprinkle mozzarella cheese on top of the sauce, before adding turkey pepperoni.
Place corn tortilla pizzas in the oven for 5 minutes. Remove with an oven mitt and allow a few minutes to cool before eating.
There's no need to add salt to the crust. The mozzarella cheese and sauce contain plenty of sodium to achieve that salty pizza taste.
You can substitute pizza sauce for marinara if you want to save yourself a trip to the grocery store.
Corn tortillas are very thin, so it's impossible to enjoy this meal like traditional pizza. It's easier to fold each tortilla in half and eat it like a taco!
