Pizza is commonly seen as ‘unhealthy’ when it comes to dieting. You can reduce the amount of calories and fat when using smarter ingredients like turkey pepperoni and part-skim mozzarella cheese.

And when you place these toppings on a corn tortilla, carbohydrates are also lower (when compared to traditional pizza). Let’s take a look at this delicious and easy-to-make meal.

Ingredients

Corn Tortillas: Pizza really isn’t pizza without a base layer. You can substitute heavy flour with tortillas. I prefer corn over flour tortillas, because they’re gluten-free, have more dietary fiber, and magnesium.

Turkey Pepperoni: In order to resemble a traditional pepperoni pizza, I decided to use turkey pepperoni as a replacement. This specific brand has 73% lower fat and 50% fewer calories. To make this meal even leaner you could use shredded chicken.

Cheese: Who doesn’t love cheese? Unfortunately it’s where fat can really start to add up. Using a low-fat or non-fat variety can help with this problem. Some people like to use a blend of cheeses, but I choose part-skim mozzarella.

Marinara/Pizza Sauce: Using marinara or pizza sauce is entirely up to you. Just be aware that some brands have heavy oils in their ingredients. This Rao’s Homemade Tomato Basil adds plenty of flavor and makes for a perfect pizza.

Start by preheating your oven to 400° Fahrenheit. Line a baking sheet with tinfoil and spray it with non-stick cooking oil. In my case I used the toaster oven rack, so the cheese wouldn’t fall through.

Carefully place the tortillas on your tinfoil and make sure they are spaced evenly. The tortillas will stick together if they are touching each other in the oven.

Then, apply the marinara or pizza sauce. You can use a spoon to spread it out and don’t forget to leave room by the edge. Sprinkle on the mozzarella cheese before adding turkey pepperoni.

Finally, place the corn tortilla pizzas in the oven for five minutes. The pizza crust is so thin and leaving them in the oven for a longer period of time will burn the tortillas.

Remember to wear an oven mitt when removing your baking sheet, or rack from the oven. Allow the pizzas to cool for a few minutes before eating. I like to fold the tortillas and eat them like a taco!

  • 16 slices turkey pepperoni (28 grams)
  • 1/2 cup tomato basil sauce
  • 2 oz part-skim mozzarella cheese (56 grams)

Instructions

  • Preheat oven to 400° Fahrenheit. Line a baking sheet with tinfoil and spray with non-stick cooking oil.
  • Place 4 small corn tortillas on the baking sheet, making sure they are not touching each other.
  • Take marinara sauce and evenly spread it out on each tortilla. Leave some room by the edge to form a crust.
  • Sprinkle mozzarella cheese on top of the sauce, before adding turkey pepperoni.
  • Place corn tortilla pizzas in the oven for 5 minutes. Remove with an oven mitt and allow a few minutes to cool before eating.

Notes

There’s no need to add salt to the crust. The mozzarella cheese and sauce contain plenty of sodium to achieve that salty pizza taste.
You can substitute pizza sauce for marinara if you want to save yourself a trip to the grocery store.
Corn tortillas are very thin, so it’s impossible to enjoy this meal like traditional pizza. It’s easier to fold each tortilla in half and eat it like a taco!
