Peanut Butter Oatmeal Protein Bars

These no-bake peanut butter oatmeal protein bars are highly addictive! They're the perfect snack if you're in a rush, plus each bar is packed with 10 grams of protein!

Equipment

  • 1 9×9 baking dish
  • 1 large mixing bowl

Ingredients

  • 1 cup old fashioned oats
  • 2 scoops unflavored whey protein
  • 3/4 cup plain Green yogurt
  • 4 tbsp creamy peanut butter
  • 4 tbsp honey

Instructions

  • Combine oatmeal and protein powder in a large mixing bowl.
  • In a smaller bowl microwave peanut butter and honey for 30 seconds. Stir this mixture thoroughly before adding it to the larger bowl.
  • Add Greek yogurt and whisk everything together. Transfer the mixture to a 9x9 baking dish with parchment paper and store in freezer for 1 hour.
  • Remove dish from freezer and cut into 9 square bars. Enjoy once thawed and store any remaining bars in freezer.

Notes

These bars are extremely gooey and sticky to the touch. The good news is this keeps them moist. But you will need to store the bars in your freezer and allow them to thaw for about 10 minutes before eating.
