Oatmeal Protein Cookies

Healthy oatmeal protein cookies with chocolate chips! These cookies are soft and flavorful with 9 grams of protein each. They're a delicious post-workout snack!

Equipment

  • large mixing bowl

  • wire cooling rack

Ingredients

  • 1 whole egg
  • 5 tbsp honey
  • 1 tsp vanilla extract
  • 1 1/2 cups rolled oats
  • 2 scoop whey protein powder (62 grams)
  • 1 tsp baking powder
  • 1 1/3 tbsp zero sugar chocolate chips (20 grams) optional

Instructions

  • Preheat oven to 350 degrees F. Line a baking pan with parchment paper, or aluminum foil and set aside.
  • Combine oats, whey protein, and baking powder in a large bowl. Mix together until no clumps of powder remain.
  • Beat egg, honey, and vanilla extract in a separate bowl. Then mix in the dry ingredients until everything is combined.
  • Fold in chocolate chips (optional) or place them on the formed dough balls before baking.
  • Roll 1 large spoonful (depending on how you like your cookies) of dough at a time into balls. Place them evenly spaced on a baking sheet.
  • Bake the cookies in your preheated oven for approximately 10-12 minutes. Take them out when they are just barley starting to turn light brown.
  • Let them sit on the baking sheet for 2-3 minutes before removing to cooling rack.

Notes

Do NOT over bake the cookies! Make sure to remove the cookies from your oven once they turn light brown (this can happen rather quickly).
Baking the cookies for too long will dry them out.
These oatmeal protein cookies will stay fresh at room temperature for 3-4 days.
