Low Calorie Cookies

These low calorie cookies are guilt-free, soft, and full of chocolate chips! You won't believe each cookie is under 70 calories. They're super easy to make and can be enjoyed all week!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups confectioners sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup light butter or butter substitute * see notes
  • 8 tbsp chocolate chips ** see notes

Instructions

  • Preheat oven to 350° F and place a piece of parchment paper on a baking sheet. Set baking sheet aside.
  • Combine flour, confectioners sugar, baking powder, and salt in a large mixing bowl. Whisk together until no clumps remain.
  • Add vanilla extract, eggs, and light butter (or butter substitute). Stir ingredients to form cookie dough, before folding in chocolate chips.
  • Form 35 balls of dough and place them onto the lined baking sheet (you will need more than one baking sheet for this).
  • Bake the cookies for 15 minutes, until the edges just turn light brown. Remove cookies from the oven and allow them to cool, before transferring them to a wire rack.

Notes

* For this recipe I used I Can't Believe It's Not Butter! - a brand of a spreadable emulsion of vegetable oil in water with a buttery flavor.
** If you want less sugar, try using Hershey's Zero Sugar Chocolate Chips.
