Healthy Pumpkin Brownies

These healthy pumpkin brownies are only 124 calories each and contain no flour! They're the perfect guilt-free treat or post-workout snack that won't weigh you down.

Ingredients

  • 1 1/4 cup pumpkin (300 grams)
  • 2 eggs
  • 1 tsp vanilla extract
  • 6 tbsp cocoa powder (30 grams)
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 cup sugar free chocolate chips

Instructions

  • Combine pumpkin, eggs, syrup, and vanilla extract in a large mixing bowl. Whisk until you get a smooth consistency.
  • Add the dry ingredients (cocoa powder, baking soda and cinnamon). Whisk again until no clumps remain.
  • Fold in chocolate chips before transferring the mixture to a baking dish. Place dish in oven and bake for 30 minutes at 350° F.
  • Remove pumpkin brownies from oven and allow them to fully cool before cutting. The brownies have a fudgy consistency and need to be stored in the refrigerator.

Notes

  • Allow the pumpkin brownies to fully cool before cutting into squares and eating. They will be very fudgy when taken right from the oven.
  • The brownies will stay fresh in the refrigerator for 4-5 days. Keeping them in the fridge will also help to hold their shape and keep the texture fudgy.
