- 1/2 cup Greek yogurt
- 1/2 cup Milk Use 1/4 cup for thicker oats
- 1/2 cup pure pumpkin
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 2 tbsp sugar-free maple syrup
- 1/3 cup oats
- 15 grams chopped pecans optional
- 2 tbsp whipped cream optional
Add Greek yogurt, milk, pumpkin, pumpkin spice, vanilla extract, and maple syrup to a mason jar. Stir everything around with a spoon.
Add the oats and stir the ingredients around once more. Allow the overnight oats to sit in the fridge for 2-8 hours. The longer they soak, the softer they will be.
Remove oats from the fridge and add pecans and whipped cream. Substitute Greek yogurt for whipped cream for more protein.
