Air Fryer Cucumber Chips

These air fryer cucumber chips are a crispy and refreshing snack! You can enjoy them on their own, or dip them in Greek yogurt for more protein!

I’m no stranger to air fryer recipes. When I found out you could air fry cucumbers, I knew I had to give it a try. And with only a few ingredients, they didn’t take long to make.

The flavorful breadcrumb exterior pairs well with the natural crunch of the cucumber. And if you’re looking for a lower carb snack, you could always try this recipe without the breadcrumbs.

The key is not slicing the cucumbers too thick. I’ve found that 1/4 inch pieces work best, because it creates enough surface area for the breadcrumbs to stick to.

Ingredients

  • 1 cucumber
  • 1/2 cup breadcrumbs
  • 1/4 cup flour
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 2 eggs

Instructions

Start off by cutting your cucumber into ¼ inch slices. Use a paper towel to remove excess water, because it will dry out the slices and help them get extra crispy in the air fryer.

Then place ½ a cup of breadcrumbs into a bowl and add 1 tsp of garlic powder, with a pinch of salt and pepper. Now you can set up the dipping station for breading.

The first bowl will be flour, the second egg, and the last bowl will be your breadcrumb mixture. Repeat this process for each slice until all the cucumbers are fully breaded.

Then place the slices in a pre-heated air fryer at 350° F. For basket style air fryers, make sure to arrange each slice so they’re not overlapping. Overcrowding the air fryer will lead to uneven cooking.

Fry the cucumber slices for about 12 minutes, flipping halfway through. You can enjoy these cucumber slices on their own or try them with your favorite dipping sauce. I’m using plain Greek yogurt here for a little more protein in my snack.

Ingredients

  • 1 large cucumber

Instructions

  • Pre-heat air fryer to 350° F. While the air fryer is warming up, slice your cucumber into 1/4 inch slices.
  • Place breadcrumbs into the first bowl and mix with garlic powder, salt, and pepper. Add whisked eggs to second bowl and flour into a third bowl.
  • Place each cucumber slice in the flour, followed by the eggs, before coating in breadcrumbs. Continue this process until each slice is fully coated.
  • Fry the cucumber slices for 12 minutes and make sure to flip halfway through.
  • Remove cucumber slices from the air fryer when finished and enjoy on their own, or with your favorite dipping sauce.

Store these cucumber chips in the refrigerator for 1-2 days max. They’ll still be good after this, but they start getting soggy and you’ll need to air fry them again.
