Peanut Butter Oatmeal Protein Bars

These no-bake peanut butter oatmeal protein bars are highly addictive! They’re the perfect snack if you’re in a rush, plus each bar is packed with 10 grams of protein!

Peanut butter and oatmeal is a tasty combination (and good for you too). It will provide your body with plenty of nutrients and keep you feeling full throughout the day.

But what happens if you don’t have the time to cook oatmeal? Chances are you’ll look through the pantry and settle on a snack that’s high in calories and sugar.

These no-bake peanut butter oatmeal protein bars help solve this problem. If you’re a busy person, you can make these treats for meal prep and have them when you need them.

Ingredients

Peanut butter: You can’t make peanut butter bars without this delicious ingredient. Peanut butter is not only sweet and creamy, but it will help bind the other ingredients together in these bars.

Oatmeal: The foundation of these bars is oatmeal. Oatmeal is low in calories, but it will also provide vital nutrients, carbs, and fiber. Any kind of oats will work for this recipe.

Protein powder: Another crucial ingredient to include is protein powder. I prefer unflavored whey, because artificial flavors don’t mix very well with peanut butter and honey.

Honey: This will add the perfect amount of sweetness to your protein bars. Honey can also be very sticky, so it helps hold everything together. Similar to oats, any kind of honey will also work in this recipe.

Greek yogurt: The final ingredient in this recipe is Greek yogurt. It will add additional protein, but there’s another reason why we use it. This type of yogurt is very creamy, so it will help keep the bars moist.

Instructions

Making these peanut butter oatmeal protein bars is fairly simple. You can scroll down to the recipe card for more detailed instructions. Here’s an overview of the general steps:

Combine the oatmeal and unflavored whey protein powder in a large mixing bowl. Use a whisk and stir the dry ingredients around until they have blended together.

In a smaller bowl, microwave the peanut butter and honey for 30 seconds. Stir this mixture thoroughly until it’s smooth and creamy. Then add it to the larger bowl.

Finally, add Greek yogurt and whisk everything together. Transfer the mixture to a 9×9 baking dish with parchment paper and store in the freezer for 1 hour.

Once the mixture has bonded together, remove the dish from your freezer and cut into 9 square bars. Enjoy once thawed and store any remaining bars in freezer.

Frequently Asked Questions

  • Why are the bars gooey?

I’m not a big fan of eating dry protein bars – which is how I came up with this recipe. The bars can be gooey, but the important thing is they will always stay moist when stored properly.

  • How do I store these bars?

The best way to store peanut butter oatmeal protein bars is in the freezer. Because they contain Greek yogurt, you should avoid keeping them at room temperature. The freezer also helps the bars stay together.

  • Why are the bars sticky?

The combination of honey and peanut butter can make them feel sticky. The only way around this is to keep the bars in your freezer and allow them to thaw for 10 minutes before eating.
