Low Calorie Strawberry Bread

Ingredients

  • 2 1/4 cups fresh strawberries
  • 1 1/2 cups all-purpose flour
  • 1/4 cup light brown sugar
  • 1 cup sugar free maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Instructions

  • Preheat oven to 350° F. Wash strawberries in cold water and pat dry. Cut them into small pieces and set aside.
  • In a large bowl add flour, brown sugar, baking soda, baking powder, and salt. Mix dry ingredients until no clumps remain.
  • Add maple syrup, eggs, and vanilla extract. Whisk all of the ingredients together until a thick batter forms. Slowly fold in 2 cups of strawberries.
  • Transfer mixture to a loaf pan. Add the remaining 1/4 cup of strawberries on top. Bake for 40-45 minutes, or until the top turns golden brown.
  • Remove strawberry bread from oven and allow it to cool, before slicing.
