Ingredients

  • Potatoes: 3 medium potatoes will work for this recipe. I’m using russet potatoes, because I think they taste the best and get nice and crispy on the outside.
  • Olive oil: Coating your potatoes with olive oil will give them a rich flavor and texture. If you want to save more calories, try using olive oil cooking spray.
  • Spices: I’m using a combination of salt, pepper, garlic powder, and paprika. This blend creates an excellent balance of flavor, without going overboard.

Instructions

Start off by rinsing the potatoes under cold water. When they have been thoroughly washed, pat dry with a paper towel and use a peeler to remove the skin.

Once all of the skin is off, you can start cutting up the potatoes. I like to slice them into 1 inch cubes – but any size will work. Just remember that larger pieces will take longer to cook in the air fryer.

Transfer the potato cubes to a large mixing bowl. Coat them with olive oil, salt, pepper, garlic powder, and paprika. Use a spoon to stir the potatoes around so they get evenly coated.

Then place the potatoes into your preheated air fryer set to 400° F. Cook them for 15 minutes, making sure to flip halfway through. If you have a basket style air fryer you can simply shake the basket during the halfway point.

When finished, remove the potatoes from your air fryer and serve immediately. You can enjoy these air fryer breakfast potatoes with eggs, bacon, sausage, or on their own!
