I know that pumpkin is a popular fall flavor, but let’s be honest. You can eat pumpkin any time of the year. To me, pumpkin and breakfast go hand-in-hand, which is why I love this recipe.

The combination of pumpkin, maple, and vanilla is perfect. Add some whipped cream, cinnamon, and chopped pecans for the ultimate breakfast (or dessert).
If you don’t already know, I love overnight oats because they’re so easy to make, and they taste delicious. But it’s also very satiating, so you won’t have to worry about that mid-morning hunger.
Pumpkin Pie Overnight Oats Ingredients
The ingredients listed here will be enough for one serving. If you want to meal prep these pumpkin pie overnight oats, multiply the ingredients by the number of jars you want.
- ½ cup Greek yogurt
- ½ cup milk (use ¼ cup milk for thicker oats)
- ½ cup pumpkin
- ½ tsp pumpkin spice
- ½ tsp vanilla extract
- 2 tbsp sugar free maple syrup
- ⅓ cup oats

How to Make Pumpkin Pie Overnight Oats
Add Greek yogurt, milk, pumpkin, pumpkin spice, vanilla extract, and maple syrup to a jar. Stir everything around with a spoon before adding the oats. Then, stir once more and place the jar in the fridge.
It’s easier to stir the ingredients before adding the oats to mix the flavors. Plus, placing the oats on top before stirring can make the jar a little too crowded.

Allow the pumpkin pie overnight oats to sit in your refrigerator for at least 2 hours. But they will soften even more if you leave them in the fridge overnight (you can see where the name comes from).
Some of my favorite toppings for this recipe are whipped cream, Greek yogurt (for more protein), and chopped pecans. For thicker overnight oats, try using more oatmeal or less milk.
Pumpkin Pie Overnight Oats
Ingredients
- 1/2 cup Greek yogurt
- 1/2 cup Milk Use 1/4 cup for thicker oats
- 1/2 cup pure pumpkin
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 2 tbsp sugar-free maple syrup
- 1/3 cup oats
- 15 grams chopped pecans optional
- 2 tbsp whipped cream optional
Instructions
- Add Greek yogurt, milk, pumpkin, pumpkin spice, vanilla extract, and maple syrup to a mason jar. Stir everything around with a spoon.
- Add the oats and stir the ingredients around once more. Allow the overnight oats to sit in the fridge for 2-8 hours. The longer they soak, the softer they will be.
- Remove oats from the fridge and add pecans and whipped cream. Substitute Greek yogurt for whipped cream for more protein.
