Moist Protein Banana Bread

With a moist and light texture, this protein banana bread is a delicious guilt-free snack! It’s not only low in calories, but it also packs in almost 10 grams of protein per slice!

Let me tell you a secret, this is my favorite banana bread recipe. People often think that adding protein to baked goods will make them dry and flavorless.

But that isn’t always the case. When you combine whey and casein protein, it creates the ideal mixture to hold in moisture. As a result, you get a perfectly moist texture with each slice.

Using ripe bananas also helps provide sweetness to this recipe. And when you add in a little honey, the end result is some of the best protein banana bread you can make.

Ingredients

  • Bananas – You can’t make moist banana bread without bananas! The most important step is allowing the bananas to sit and ripen for a few days, before making this recipe.
  • Eggs – Eggs are a vital ingredient whenever making delicious baked goods. They will improve the thickness of the banana bread, build volume, and provide stabilization.
  • Milk – If you’re interested in food science, milk encourages browning reactions in baked goods. That means it will give your protein banana bread a nice light brown color.
  • Honey – Adding a small amount of honey is a great way to make your protein banana bread sweeter. It also helps retain moisture and prevent an unwanted dry texture.
  • Vanilla extract – A dash of vanilla extract may seem optional at first. But it’s perfect for enhancing the flavors of other ingredients in the recipe.
  • All-purpose flour – Any kind of flour will work in this recipe. I opted for gluten-free flour and the protein banana bread still came out very moist.
  • Almond four – I also added an equal amount of almond flour. It not only tastes good, but baking with almond flour is nutritious and provides many health benefits.
  • Baking powder – Using a small amount of baking powder will create air bubbles in the protein banana bread. This will also make it feel light and airy.
  • Cinnamon – Cinnamon will add that classic banana bread flavor. I find that it pairs well with the other sweet ingredients (bananas and honey).
  • Protein – A combination of whey protein and casein protein is ideal when making moist banana bread. If you only use whey, the texture will be too dry!

Instructions

Making this banana bread can be done in under one hour (including cooking time). You can scroll down to the recipe card for more detailed instructions. Here’s an overview of the general steps:

Begin by preheating your oven to 350° F. Then place a sheet of parchment paper in a loaf pan and set it aside.

Mash the bananas in a large mixing bowl. If you want larger chunks of banana, mash for a shorter amount of time (and vice versa). Then whisk in eggs, milk, honey, and vanilla extract.

Gently add in the dry ingredients. This includes all-purpose flour, almond flour, baking powder, cinnamon, whey protein, and casein protein.

Once everything has been mixed together, pour your batter into the loaf pan and place it in the oven for 40 minutes, or until the top turns golden brown.

Remove the protein banana bread from the oven and allow it to cool before slicing. The banana bread will stay fresh in a refrigerator for 5-6 days (covered).
