Who says pumpkin can only be enjoyed in the fall? There are many pumpkin health benefits – which is why it’s a good idea to eat it once in a while.
It’s rich in beta carotene, can help reduce certain types of cancers, and it’s packed with Vitamin A. But pumpkin can also taste amazing when paired with the right ingredients.
These healthy pumpkin brownies are a great example. They’re low in sugar and don’t contain any flour. Don’t assume you need to eat these in the fall either. Pumpkin brownies are great any time of the year!
Ingredients
- Pumpkin: You can’t make pumpkin brownies without pumpkin. Canned pumpkin is super rich and it make the brownies have a fudgy texture.

- Maple syrup: You’re probably thinking that maple syrup isn’t healthy. This is true – which is why I’m using sugar free maple syrup for this recipe.

- Cocoa powder: Up until this point the brownies are mostly made from pumpkin. But cocoa powder will improve the recipe and give a rich chocolate flavor.
- Baking soda: Both baking soda and baking powder are leavening agents used in baking. This ingredient will help the brownies rise.
- Cinnamon: I always find that a dash of cinnamon pairs extremely well with pumpkin. It provides just a little extra flavor that you want in a brownie.
- Chocolate chips: Folding in sugar free chocolate chips will top off this recipe. They will provide a slightly different texture and a rich chocolate taste.
Instructions
In order to make these healthy pumpkin brownies, you can combine all of the ingredients into a large bowl. Scroll down to the recipe card for more detailed instructions. Here’s an overview of the general steps:
Start off by combining the pumpkin, eggs, sugar free syrup, and vanilla extract in a large mixing bowl. Whisk until a smooth consistency develops.
Then add the dry ingredients (cocoa powder, baking soda and cinnamon). Whisk again until there are no more clumps.
Fold in the chocolate chips before transferring the mixture to a baking dish. Place the dish in the oven and bake for 30 minutes at 350° F.
Finally, remove the pumpkin brownies from the oven and allow them to fully cool before cutting. The brownies have a fudgy consistency and need to be stored in the refrigerator.
You might notice they are very fudgy when straight out of the oven. That’s why it’s so important to allow the brownies to fully cool first.
